    LEARNING

    Courses


    F&N 202 Food Preparation and Nutrition. An overview course on food science and human nutrition principles. For Hospitality and Tourism Management students. Created and use an online Nutrition Management System for students to assess their food choices compared to the Dietary Guidelines and MyPyramid. Students choose goals to work toward. Do assignment twice each semestedr.


    INTERNATIONAL PROGRAMS AND ACTIVITIES

    1993-present - Became the first person in the country to establish a national computer-linked mail group/forum for state Cooperative Extension foods and nutrition specialists and other professionals in the field of nutrition education. By 1994, the group was international. Currently, the mail group contains over 700 subscribers from state Cooperative Extension Services, several services at the federal level within the United States Department of Agriculture, the National Agricultural Library, the Centers for Disease Control (who also send the mail to 50 state departments of health), and the American Dietetic Association. Nutrition professionals from 10 other countries also participate in discussions related to diet/health and food safety issues of concern to the public.

    2000 - Gave a workshop and presentation at the International Congress of Dietetics in Edinburgh, Scotland.

    2004-2006 Manage the website for the American Overseas Dietetic Association.
