F&N 530 Public Health Nutrition

Objectives: At the completion of F&N 530 the student will be able to:
Describe
the role of public health in the
List basic principles of epidemiology and types of epidemiological methodology used in the study of community health.
List and explain common biostatistical data unique to the reporting of public health data, with emphasis on rates and ratios used to report data with nutritional relevance.
Give an overview of the laws and regulations which affect public health nutrition programs and services.
Identify organizations, agencies, and programs that deliver nutritional health care services to the public.
Review WWW sites of importance to public health nutrition.
Explain how to monitor nutrition legislation and list strategies to impact legislation on nutrition issues/concerns. Write a letter to a federal legislator on a topic of current impact.
List principles (social, cultural/diversity, psychological, economic, biological, communication, etc.) useful in solving public health nutrition issues/concerns.
List and access the body of literature (research, professional) related to public health nutrition and the delivery of services.
Discuss the role and responsibilities of the nutritional professional in the public health setting. Write a final project paper detailing a job description including all activities relevant to a public health nutrition educator in a selected state.
Identify methodology appropriate for nutritional assessment (ABCD) and surveys in the community (public) setting. Describe how current monitoring tools of national significance are collected and evaluated (HNANES, CFSI, etc.)
Explain how to assess the need for and the methodology related to nutrition education in the public health setting.
List "at risk" populations, explaining their unique needs for public health programs in general, and nutrition, in specific.
Prepare an analysis of a selected at risk population complete with educational materials designed for the population.
List general counseling approaches which would work with different cultures.
Apply financial costing methodology and other evaluation methods to public health nutrition services.
Explain the role of quality assurance in managing public health nutrition services.
Explain issues related to food and nutrition security, including programs designed to alleviate hunger with potential resources. Describe an overview of world hunger issues/concerns.

Responsibilities:
Attendance in this class is expected. You are allowed 2 absences with no penalty. Save these two if you expect interviews to be scheduled, or for days of unexpected illness. After 2 absences, any absence will result in one lowered letter grade after the course grade is determined. You are responsible for all materials presented in lecture and assigned in required reading. Work assigned in the class as projects must be an individual effort. It is expected that any communication with guest lecturers in the course will be professional and courteous.
Course
Required readings from the text and journals are listed with the course outline. In most cases, the required reading from journals is duplicated in the syllabus. There are additional syllabus materials which supplement lecture that are required reading, and there are syllabus materials for reference only. Required text and journal reading will be evaluated via exam questions. To assist you in reading journal articles, study questions for the articles are in the syllabus. Additional readings from texts and journals are available for those students who desire further study.
