          • Oligosaccharide
          • Di-, tri-, tetra-, penta-, hexa-, hepta-, octa-, nona-, and decasaccharide
          • Maltose
          • Lactose
          • Sucrose
          • Invert sugar
          • Molasses
          • Olestra
          • Sucralose
          • Raffinose
          • Stachyose
          • Isomaltulose, Isomalt, Palatinose
          • Neosugar
          • Reversion
          2. Give chemical structures for maltose, lactose, and sucrose.

          3. Give shorthand structures for the disaccharides listed in objective 2 plus raffinose and stachyose.

          4. Describe the cause and results of lactose intolerance.

          5. Describe how substances such as sucrose and sorbitol act as cryoprotectants.
